We are getting closer to Valentine’s and what better way than to serenade your man/woman with cuisine from around Africa.

This week we are in the coastal city of Mombasa, known for its wonderful beaches and lovely atmosphere. If you would like to see more about Mombasa, click here.

Our goal today is to prepare a staple dish of the people of Mombasa, Kuku Paka, which is a Kenyan Asian fuse of chicken in coconut curry.

If you are ready to cook this delicacy as I am, whip out your utensils and let’s get cooking.

Cooking time: 25 minutes

Serves: 5 ( You may love it so much you call other couples to spend your evening with you)

Ingredients:

1lb chicken cut into 4 inch pieces

1 tin coconut milk (or 4oz cream of coconut made up with 1 mug of warm water)

2oz grated tomato

1 tsp salt

½ tsp turmeric powder

1 tsp freshly ground ginger

1 tsp freshly ground garlic

2 finely crushed fresh green chillies

½ tsp ground black pepper

1 dsp freshly squeezed lemon/lime juice or bottled lemon juice

2 dsp freshly chopped green coriander

 

Cooking Method:

Place the washed chicken dishes into a pan adding half of the salt, half the green chillies and half the grated tomatoes. Add the ginger, garlic, tumeric and pepper. Bring to boil and slow cook until fully cooked over low heat, adding water when necessary.

In another pot, add the coconut milk with the rest of the green chillies, grated tomatoes and salt. Let the mix boil for about seven minutes until coconut milk has a thickened consistency. Take it off the heat and let it cool for a few minutes.

Pour the coconut mixture over the chicken and let it boil together on low heat for two to four minutes.

Add the lemon juice and garnish with fresh coriander leaves. Serve with rice or potatoes.
