Hi Folks!!! Another Foodie Friday is here and we’re excited.
This week we are in the bustling lakeside city of Cyangugu. Cyangugu is indeed a fast-growing holiday destination in Rwanda, thanks to its tourist-friendly people and resources. Recreational activities such as boat cruising, swimming, mountain hiking, shopping and lots more are some of the many activities that make Cyangugu tick. We will be making a simple dish of bananas with split green peas. Bananas are a staple dish of most East African countries and usually served with different sauces.
If you are ready to try this dish like I am, whip out your cooking utensils and let’s get cooking.
Ingredients:
400 g dried split green peas, soaked overnight
4 ripe bananas
1/2 tsp salt
2 tbsp palm oil or groundnut oil with 2 tsp paprika
1 small onion, thinly sliced
Method:
Put peas into a pan and add water. Bring to boil and simmer for about 90 minutes.
When peas are tender, peel bananas and place them on top of the peas. Do not mix. Cook together in pan for about 10 minutes until bananas are very soft. Add water if necessary so that the peas do not stick to the bottom of the pot.
Heat the palm oil in a large frying pan and add the paprika, onions until they become brown. With a slotted spoon, add the bananas and the peas to the palm oil mixture.
Add salt to taste. Cook over medium heat and continuously stir until all the oil has been absorbed.
Serve immediately.
