Ever just wanted something sweet to sink your teeth into, simple but yet delicious enough to warrant a second helping?

Well, this week we are going to have that kind of treat, making Nthochi bread – Malawian banana bread which is actually the well-known banana bread that’s eaten the world over! 

So if you like to try new things as I do, whip up your cooking tools and let’s get to work!


Cooking Time: 90 Minutes

Serves: 4

Ingredients: 100 g butter

90 g sugar

400 g flour

1 egg

250 ml milk

1 tsp baking powder

1 tsp salt

5 ripe bananas, peeled and mashed


Cooking Methods: Preheat the oven to 350°F (175°C), and butter a 4×8 -inch loaf pan.


In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.

Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.

Tip into a well-greased loaf tin and place in an oven pre-heated to 350°F (175°C).


Bake for about an hour, or until the cake has set. Allow to cool, tip out of the tin then cool completely and slice using a bread knife for slices that are not crumbly.


If you feel up to it, you can make several variations of banana bread; chocolate chip banana bread, coconut & vanilla banana bread, buttermilk banana bread, etc.
